Peach Cheesecake

This picture just doesn't do this cheesecake justice. This is a delicious cold treat on a hot day and one of our family favorites. I can't call it healthy, at all, but yummy is sometimes just as good! This recipe makes two cheesecakes and we often keep the extra one in the freezer for several weeks and pull it out when we want a quick dessert.

4 8oz. packages cream cheese

3/4 c. sugar

1 pkg. peach jello

1 15 oz. can peaches, drained, cut into small dices or two fresh peaches peeled and diced

1 8 oz. Cool Whip

2 Graham cracker crusts

Beat sugar and cream cheese. Mix in jello mix. Stir in peaches and Cool Whip. Pour into two graham cracker crusts. Cover and freeze. Thaw 20-30 minutes before serving.

    While I thank you for posting your seemingly delicious recipe for Peach Cheescake, I question the need for graham crackers. I am sure it was a simple and innocent mistake of what exactly one is to do with them. I however can't help, but think of one sitting in their bed bawling their eyes out with graham crackers and a jar of nutella crying over all the weight gain from eating the ENTIRE cheesecake themselves, so instead sits and stuffs themselves full of graham crackers and nutella to make them selves feel better. What? That's not normal you say? Oh. I guess it's just my house. ;) P.S. I can't WAIT to try this recipe.

  2. Joni - LOL! I went back and edited the recipe. Now you can nix the tears and stick that nutella back in the cupboard for another day! :)
