I Love Summer!

Typically on a day like yesterday we would have been grilling out some hamburgers. In our effort to cut back on our meat consumption I purchased MorningStar Veggie Burgers. These are actually quite delicious and while they are somewhat processed sometimes a busy mom has to take a few shortcuts. There is no question that they are healthier then some ground beef from a cow that was raised in a feed lot. The kids all loved them topped with a bit of cheese (ah...yes, um...processed cheese...forgive me!), onions, lettuce, and some ketchup and mustard.

The pea salad was thrown together. Just a can of peas, drained, sliced onions, chunks of cheese, mayo, and some Nature's Seasoning. Something was missing so I'll add some celery in next time.

We had the first sweet corn of the season! I've bought sweet corn at the store recently but I'm sure that was from Florida or another far away state. Tonight we saw a truck parked out by Walmart selling sweet corn and I just had to buy some local corn! Which means I spent $4 more on groceries but am still under budget for the week. The man warned us that the corn was real tiny and a bit buggy (with the wet weather we have been having lately I think one would be hard pressed to find corn that wasn't a bit buggy) but that it was good. He was right...we ate all 16 ears of corn for supper! I'd be scared to see how much a bigger family would be able to go though!

On a side note, we got our first cucumber from the garden today and the kids scarfed it down in seconds. Joe also tore the half ripe cherry tomatoes from the vine and popped those into his mouth. I thought for sure he would spit the first one out but that boy loves tomatoes so much that he even enjoys the half ripe ones! I can't wait until we are getting more from the garden and I'm anxiously awaiting my first bite of a garden fresh cucumber still warm from the sun!

  1. Don't you love homegrown veges? We have eaten 3 cucumbers so far and I just picked a ton of green beans and a zuchini. I told dd at supper to go pick some cucumbers for supper. She came in and said she liked to just pick food and then eat it. Tomorrow will be hamburgers on the grill with fresh green beans and grilled zuchini. YUM YUM!!!!!

  2. Elizabeth!! I'm a Vegetarian and I love, love those Morning Star Veggie burgers. My favorite is the Black Bean burgers. Also, they're Riblets... SO yummy. Try them sometime. I serve them with Bush's Vegetarian Baked beans and corn on the cobb or another Veggie. I started a Garden this Spring as well, growing cucumbers, tomatoes and Pumpkins. Can't wait until they're ready to eat.

  5. we eat a lot of fresh veggies during the summer, and with a large family that is always on the go...I tend to make a lot of 'quick' easy to throw together recipes.

    Tomato casserole has become a family favorite this year. And it's perfect when served with a side of salad and an ear of corn.

    Recipe:
    sliced tomatoes
    sliced onions
    butter or margarine
    parmesan cheese
    salt and pepper
    shredded cheddar cheese
    Ritz crackers

    Spray 9×13 pan with cooking spray. You will layer your ingredients like a lasagna. Cover the bottom of the sprayed pan with sliced tomatoes. Then sprinkle with salt and pepper. Put 1-2 slices of onion on top of each tomato and then a pat of butter or margarine on each slice. Sprinkle generously with parmesan cheese and then with cheddar cheese. Repeat layers again. Bake until tomatoes are soft (usually 40 minutes) and then top with crushed Ritz crackers. Bake another 5-10 minutes. So yummy!

    To cut calories and fat use low-fat margarine, fat free shredded cheese, and low-fat Ritz crackers.

    I add a small amount of melted butter to the crumbled Ritz crackers before using as topping. keeps them from drying out too much in the oven.

  7. HA-my almost 4 year old son loves tomatoes so much he'll eat them half ripe off the vine too!

    Oh my-we have gotten a TON of cucumbers out of garden this year, we have given them away, ate them daily (we eat cucumber slices instead of chips with sandwiches) and still had to throw some away cause they went bad before we could give them away or eat them or have a chance to pickle them :(

    Gardens are weird, last year we were drowning in yellow and zucchini squash this year-no squash...drowning in cucumbers. LOL
