Wake Up, Sleepyhead!

If the thought of this for breakfast doesn't excite you enough to get out of bed then I don't know what will!
I've never been a huge fan of oatmeal. With my new health quest I wanted something healthy and easy for breakfast and one recipe that fits the bill is oatmeal. Not just any oatmeal, but steel cut oatmeal. Steel cut oatmeal is minimally processed and has a much different texture than quick oats. It is chewy, much like brown rice, and tastes a bit nutty. It does take longer to cook (about 30 minutes) but besides stirring a couple times you do not need to hover near the stove top as it cooks.

I made 4 servings (which is 4 cups of water and 1 cup of uncooked oatmeal). Becca and I had a bowl each and there was enough for me to put a bowl of leftovers away for another time.

I added walnuts, real maple syrup (a bit goes a long way), and sliced bananas. It was heaven in a bowl and I was full all morning. There are so many possibilities. You could add honey, raisins, pecans, apples, dried fruit, or whatever your heart desires.

I had the leftovers for lunch yesterday. I added a couple splashes of milk, stirred, and microwaved for about two minutes (stirring once between). I again added the walnuts, maple syrup, and banana. It was even better the second day! I wonder if I could ever tire of this deliciousness?!

  2. My husband hates oatmeal, but it is such a cheap and healthy breakfast. This is the only way he likes it: I make oatmeal at night (don't add butter) and then pour it into a casserole dish. Cover with saran wrap and refrigerate. The next morning I cut the cold oatmeal into squares and brown on both sides in a little butter. Sprinkle with your syrup/honey/sucanat and a bit of cinnamon. Enjoy :) It's delicous!

  3. At supper time or before bed take your oatmeal and put in a glass bowl. Cover the oatmeal with water. Put on a lid or cover with towel. In the morning, set your water boiling, then add the oatmeal. It should be done in 5 minutes. It makes it a lot quicker and it is healthier for you. Check out the Weston A. Price Foundation website for more information on soaking your grains before eating them. We like to add raisins or other dried fruit to the oatmeal at night. SO GOOD!

  4. I love oatmeal, but when I cook it I don't add all of the water in the directions. I like my oatmeal to be chewy and crumbly. Then I add raisins, perhaps some chopped apple or pear along with a touch of brown sugar or honey. I do add a small amount of milk.

    Okay, I am definitely going to have this for breakfast tomorrow, or maybe before I go to bed tonight.

  5. I like peanut butter and brown sugar.
    Also try the "cookie" varieties: brown sugar + vanilla + chocolate chips = choc.chip cookies, raisins + vanilla + cinnamon + sugar = oatmeal cookies, etc.
